oatmeal minis

I love a good oatmeal raisin cookie. I decided to make a batch last night but I wanted to add a little chocolate to them (we know everything is better with a little chocolate). I also wanted to make them smaller than your average cookie.  The recipe is simple and they turned out delicious.



Ingredients:

  • 2 sticks of unsalted butter, at room temperature or slightly melted
  • 1 cup dark brown sugar
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature 
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 1/2-3 cups oatmeal oats
  • 1-1 1/2 cups raisins
  • 2 bars of Hersheys Milk Chocolate



Directions:
  • Preheat the oven to 350 degrees
  • In a food processor, mix the butter, brown sugar, and granulated sugar together until light and fluffy
  • Add the vanilla extract and eggs, one at a time
  • Combine the flour, baking powder, cinnamon, and salt together into a big bowl
  • Slowly add the ingredients from the food processor into the bowl and mix
  • Add the oats and raisins and mix until all combined
  • Scoop small mounds of dough onto baking sheets lined with parchment paper
  • Bake for 12-15 minutes or until just lightly browned on the bottoms
  • Let the cookies cool
  • Cut the cookies in halves and quarters 
  • Melt the chocolate in a microwavable safe bowl
  • Once cookies are cooled and cut, drizzle the melted chocolate on them
  • Let cool a bit more and enjoy!
